Neil Perry’s Rockpool, Sydney, has been established since 1990, founded on a philosophy of ‘using finest, freshest produce to create wonderful food’.
Neil’s brief for this new concept, was to create a ‘great produce experience’, a fusion of the Rockpool ethos anda classic North American steakhouse. Reference was also made to the grand brasseries of Paris such as La Couple and Le Dome. Life span of fit-out is expected to be 20 years or more.
To convey this ‘total’ experience to guests, they discover the venue through a series of antechambers as though entering via the back of house. First the ‘Produce Hall’ where food items are stored and prepared and there are glimpses of Neil’s ‘creative’ vestibule and the kitchen area. Guests are greeted in the ‘cellar’ bar where a large working stock of wine is held. Light meals and drinks are served here, prior to arriving in the formal dining room traversing a monumental curtain composed of over 2000 lengths of marine rope. At the heart of all theseareas is the monumental display kitchen which incorporates an authentic charcoal grill.
